We politely passed on cheaper cassia cinnamon, the one that almost all of today's applesauce manufacturers use and contains significantly higher amounts of the toxic, coumarin. Instead, we use Ceylon cinnamon, sourced from fair trade organic farms in Sri Lanka, where it has been prized as a cooking spice for hundreds of years!
